Lets Make Easy Chicken Tortilla Soup

This soup doesn’t take long at all, easy and quick to make. Chicken Tortilla Soup can be made in a dutch over, pot or crockpot. Don’t have time to sit over the stove? Add it to the crockpot or duct over and shred chicken before eating.

Chicken tortilla Soup

Ingredients

  • 1 yellow onion
  • 3 stalks of celery
  • 2 tbsp minced Garlic
  • 2 tbsp Butter
  • 4 Cups of Chicken Broth 4 Cups of water 4 tbsp chicken base
  • 3 chicken breast sliced in half to cut down cooking time
  • 1 Can of Black beans drained
  • 1 Can of Rotel tomatoes and green chilies un drained
  • 1 Can of Diced Tomatoes
  • 1 Can of Corn or half frozen bag
  • 1 Can of tomato sauce
  • 1/3 block cream cheese
  • 1 Cup Cheddar Cheese
  • 1 package taco seasoning
  • 1 Pkg Tortilla Strips or Chips

Instructions

SAUTÉ:

  • 1 yellow onion
  • 3 stalks of celery
  • 2 tbsp minced Garlic
  • 2tbsp Butter

Deglaze with:

  • 4 Cups of Chicken Broth (4 Cups of water 4 tbsp chicken base)

Reduce heat to low & Add:

  • 3 chicken breast (sliced in half to cut down cooking time) let simmer for 10 to 15 mins

Remove chicken and shred then put back along with:

  • 1 Can of Black beans (drained)
  • 1 Can of Rotel tomatoes and green chilies (un drained)
  • 1 Can of Diced Tomatoes
  • 1 Can of Corn or half frozen bag
  • 1 Can of tomato sauce
  • 1/3 block cream cheese
  • 1 Cup Cheddar Cheese
  • 1 package taco seasoning

Simmer for 20 to 30 mins then serve

    For Creamy result

    • 1/2 Cup heavy cream 1 tbsp flour
