Small Batch Peach Cobbler

Perfect amount of peach cobbler for 2 ramekins or a larger personal size. I love this quick dessert when I have a sweet tooth.

Ingredients

Filling

  • 1 can peaches
  • 1 tsp cinnamon
  • 1/4 nutmeg
  • 1/4 C sugar
  • 1/8 cup brown sugar
  • 1/4 tsp rum
  • 1/8 tsp salt
  • 1 tbsp cornstarch

Batter

  • 1 tsp baking powder
  • 1/2 cup milk
  • 1/2 cup flour
  • 1/4 c sugar
  • 1/2 tsp vanilla

Instructions

  • Step 1
    Mix together all ingredients for Filling then heat on medium to high heat until it thickens
    Step 2
    Pour into sprayed ramekins fill about 2/3 full
    Step 3
    Mix together all ingredients for batter
    Step 4
    pour batter over the top
    Step 5
    pour 1 tbsp of melted butter on top of both ramekins
    Step 6
    bake on 350 for 20-25 mins bake until tops brown batter will rise as it is baked.
